Suggestions for a gourmet dinner dish? 10 points best answer?

I’m hosting an all-day party where some friends and I cook all the meals, with the aim to impress. I have the breakfast and lunch menus mostly set, but what should I make for dinner??? Here’s the catch: it must be kosher (No meat with dairy products in the same dish, fish is ok though) and no red meat (no pork). Please give an actual recipe that you have tried if possible. And it would be excellent if you could give a few recipes that would go well together. Thanks!

Oh! and for lunch we are having a Tomato Bisque En Croute (with puff pastry) followed by a fruit dish, any suggestions to add to this?
